Pot Roast Sunday

So today, I made my very first pot roast.

And it turned out pretty good. . . but I definitely learned some things.

The meat itself was delicious (I thought).

But the veggies were way too soft. I always assumed that Mom just cooked the veggies and meat together for the duration of the cooking time. However, after chatting with Aunt Mar and eating my veggies, I don't think so. I don't remember our veggies being so soft.

So next time, I'll try it differently.

Because I used cream of mushroom soup, the broth was (almost) thick enough to be gravy, so we used it as such. I thought it seemed to have a little too much beef flavor to it (as in, I added too much beef bullion), but it was still pretty good.

McKay, McKenna, and Tyler were really good sports about my experimental roast. They at least pretended to like it all, which made me happy.

Also, I don't think I cooked enough veggies. Most recipes I looked up only called for a couple of potatoes quartered. I did four medium-largeish potatoes. . . but that didn't seem to make enough.

Anyway, lessons learned, and hopefully next time will be even better.

Oh no I don't think they were pretending to like it. When McKay called me last night he told me how good it was! So there's proof. :)
