The BEST Tomatillo Dressing

Last night for dinner, Tyler and I made delicious faux-Cafe Rio burritos, complete with rice, beans, and tomatillo dressing.

Now, I've tried several different tomatillo dressing recipes, and they never taste like Cafe Rio's dressing. Well, neither does this one. But it is so good, I don't even care. I like it even more than Cafe Rio's tomatillo dressing.

So for those of you interested in making this dressing (which would probably be good on just about anything), check it out:

Tomatillo Sauce:
1 c. sour cream
1/2 Fiesta Ranch Packet
1 Ranch packet
6 tomatillos, husked and halved
1 clove garlic
2 limes, juice
1/4 c. cilantro

Mix it all in a blender then serve. Or chill first (which I prefer).

I also want to say that I love the rice and bean recipe Aimee also submitted for these burritos.

So, I'll include those here, too. (Seriously. Make this and eat it.)

Rice
1 c. rice
1 tsp. butter
2 cloves garlic (chopped finely)
1 tsp grated lime zest
1 can chicken broth
3/4 c. water

Cook 15-20 minutes or in a rice cooker. (I used the rice cooker, it turned out perfectly.)

Mix and pour over rice when done:
2 T. lime juice
2 tsp. sugar
3 T. fresh cilantro (chopped finely)

Beans
2 cloves garlic (chopped finely)
1 tsp. cumin
2 T. olive oil
1 can black beans, drained & rinsed
1/3 c. tomato juice
1/2 tsp. salt (I guesstimated on the salt, next time I think I'll forego it altogether, I'm not sure it's necessary)

Simmer over the stove until heated through. Add 2 tablespoons fresh cilantro just before serving. (I left out the cilantro on accident, but I think the bean flavor without the cilantro was perfect.)

Then of course, we did the crock pot pork (pork, 1 c. salsa, 1 c. brown sugar, 1 tsp. chili powder all cooked on low for 8-ish hours). The pork turned out great as usual, but since I've been pregnant, meat and I aren't really that close, so I actually didn't care for it too much. Tyler loved it.

Make this dinner for yourselves. It's awesome. And it makes leftovers (except for the beans) if you are serving two people.
