Mushy Vegetables

My favorite Sunday meal is probably the deliciously slow-cooked pot roast. Or maybe the oven cooked pot roast. I guess it depends on the roast.

Anyway.

Part of what makes the meal SO good is the vegetables that go along with it. Who doesn't love potatoes and carrots with a side of falling-apart-melt-in-your-mouth-delicious pot roast?

And the last time I made it, we had McKay and McKenna over for dinner. (They are coming back to Provo tonight!! Thank goodness; we have missed them!!)

Anyway, the pot roast dinner was delicious then. But I remember getting mixed reviews about the veggies.

So I called my aunt last night to ask her how she prepared them, and decided to do the same.

That is, until church today when Tyler was asking me if I'd already gotten things started in the slow cooker. And because I am awesome I told Tyler that, of course, everything was ready to go, except the veggies which I would add near the end.

And all of the sudden, Tyler got this sad look on his face, and said, "But I like mushy vegetables!"

So because I am awesome (and maybe because that's how my veggies always were when Mom made roast), as soon as I got home from church (and changed into comfy clothes) I added in the veggies.

Hope they are mushy enough!

Addendum: The veggies were perfect. (And so am I. Tyler made me say so.)

I always thought the pot roast veggies were just right...:)
