Let me begin by saying that nothing tasted exactly like Cafe Rio. . .
But. . .
Oh my goodness! The pork was SO good. And so easy to make.
The dressing was fair, but not the best. Tyler has a different recipe that I want to try next time instead.
The rice tasted totally different. . . but was delicious.
And everything was so filling.
This is one meal that I would definitely make again. (And I am actually looking forward to the leftovers!)

I will pass this info on to the sister missionaries. How much lime juice did you use? It didn't say on the recipe so I wasn't sure where to begin with that. Also, my sister makes the pork with no chili powder in it...did you think the chili added a lot to it? Did you use the whole teaspoon? Oh and one more question (sorry) do you remember how big your pork roast was?

Good questions! I actually used the full teaspoon of chili powder, and sprinkled a little extra for good measure. (I also sprinkled a little extra brown sugar--probably about a tablespoon more--because I wanted to finish out the bag.) I don't know if the chili powder made a huge difference in the pork because the salsa/brown sugar mix is so sweet. It might have added a little zip to it. Also, the pork roast we bought was probably a little less than 32 ounces. . . I think. (It was a little less than $8 worth of meat.)
For the lime in the rice, I just squirted freely. But the rice didn't really have a limey flavor. Because of the chicken bullion, it had kind of a salty/cilantro-y flavor. But it was really good.
I don't remember if I said so or not, but this is very, very filling.
